Lemon Poppyseed Protein Waffles

Adding protein to your breakfast is an essential way to keep you full and focused throughout your day, and still hit your protein recommendation. Our Vegan Lemon Cream Protein Powder adds high quality plant based protein and rich, zesty lemon flavor to this simple bariatric friendly waffle recipe. These waffles can be made in advance and frozen, then reheated in your toaster for busy mornings!

Ingredients
- 1 cup pancake mix (recommended Birch Benders or Kodiak Cakes brands)
- 2 scoops Celebrate Lemon Cream Vegan Protein Powder
- 1 large egg
- ¾ cup milk (skim or dairy-free)
- 1 tsp lemon juice
- 1 tsp poppy seeds
Directions
- Combine baking mix and protein powder.
- Make a small well in the center of the dry ingredients. Add eggs and milk, stir until well combined. Try not to over mix.
- Stir in lemon juice and poppy seeds.
- Pour ¼ cup of the mixture into a prepped waffle iron. Cook for 3-4 minutes or until the waffle is golden brown.
- Top with your choice of peanut butter, sugar free maple syrup, greek yogurt, or berries for a well balanced, high protein breakfast!
Note: These waffles also freeze very well and can be reheated in a toaster.
**This recipe can also be used to make pancakes in a non-stick skillet.
