Watermelon season is in full swing and there is nothing more refreshing on hot summer days than this crisp and fresh watermelon salad! It's great to keep in the refrigerator for lunch or have with grilled chicken for a quick and easy dinner!
Ingredients:
- 4 cups watermelon, diced small
- 1 English cucumber, diced small
- 1 shallot, sliced thin (sub red onion*)
- ¼ cup feta cheese, crumbled or cubed
- 2 tbsp sliced green onion
- 1 tbsp mint, chopped
Dressing:
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 1 tbsp honey
- 1 clove garlic, grated
- ¼ tsp salt
- Pinch ground black pepper
Directions
- In a small bowl, whisk together dressing ingredients
- In a large serving bowl, combine watermelon, cucumber, feta, half of the chopped herbs, and sliced onion. add dressing, toss to coat.
- Top with remaining herbs, serve immediately! Note: salad can also be served over mixed greens.
