Week night dinners are often hectic and one-pot meals can be a real life saver! This one pot chicken recipe combines lean protein like chicken, whole grains like quinoa or brown rice, and lots of nutrient dense veggies, you can have a nutritious and satisfying meal in no time!

Ingredients
- 1 ½ lbs. boneless skinless chicken breast, diced
- 1 cup quinoa, rinsed and drained
- 1 medium onion, diced
- 1 large carrot, chopped
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 tsp. paprika
- 2 tsp. Italian seasoning
- 1 lemon, juice and zest
- 2 cups frozen riced cauliflower
- 1 cup frozen peas
- 2 cups baby spinach, chopped
- ½ cup plain greek yogurt
- Salt and pepper to taste
Directions
- Heat a dutch oven, or large pot over medium heat. Add 2 tbsp. olive oil to the pan and allow to heat. Add chicken in a single layer and allow to brown on all sides. Remove from pan and set aside.
- Add onion and carrot to the pot. Cook for 1-2 minutes or until slightly softened. Add garlic and cook for another minute.
- Add quinoa into the pan, stir to coat with oil. Pour chicken broth in and return the chicken to the pan. Add all seasonings, lemon juice, and lemon zest. Cover and cook for 15 minutes or until the quinoa is tender.
- Add frozen cauliflower rice, frozen peas, frozen broccoli and spinach into the pan. Stir to combine, cover and cook for another 5 minutes.
- After 5 minutes, stir in the greek yogurt and stir to combine. Season with salt and pepper to taste!
