If you’re looking to lighten up your St. Paddy’s day menu, this sauteed cabbage is a great addition! It’s very easy to prepare and is great for busy weeknights.
Sauteed Cabbage – 6 servings
1 small head white cabbage (about 2.5 lbs), shredded thin
1 large sweet onion, sliced
2 cloves garlic, minced
2 tbsp olive oil
½ tsp salt
¼ tsp ground black pepper
½ tbsp apple cider vinegar
1 tsp dried thyme
*Optional ½ tsp Caraway seeds
Using a large knife, shred the cabbage fairly thin. Slice onion to about the same size.
Heat 2 tbsp oil in a large sauté pan over medium high heat. Add onion and cook 2 minutes, or until soft. Add in garlic and cabbage. Cook for 10-15 minutes, stirring occasionally until the cabbage is tender and begins to brown.
Season with salt and pepper, thyme, and carraway if desired. Drizzle over apple cider vinegar and stir to combine!
