INGREDIENTS:

2 large English cucumbers
8 oz Neufchatel Cheese (1/3 less fat cream cheese)
2 tbsp fresh dill
2 tbsp scallions, finely chopped
2 tsp lemon juice
½ tsp garlic powder
½ tsp salt
¼ tsp pepper
8 oz smoked salmon, cut into small pieces
Fresh dill to garnish

INGREDIENTS:

4 eggs
½ cup sugar
3/4 cup vegetable oil
2 tsp vanilla extract
¼ tsp salt
1 tsp baking powder
