Coming up with appetizer ideas is always a struggle... But we’ve got you covered! These cucumber bites are perfect for your next holiday party! Don’t like smoked salmon? No problem – top your bites with sliced cherry tomatoes or a small piece of crispy prosciutto.
Serves 10-15
Prep time: 30 minutes
Ingredients:
- 2 large English cucumbers
- 8 oz Neufchatel Cheese (1/3 less fat cream cheese)
- 2 tbsp fresh dill
- 2 tbsp scallions, finely chopped
- 2 tsp lemon juice
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- 8 oz smoked salmon, cut into small pieces
- Fresh dill to garnish
Directions
- Peel cucumber if desired. Slice into bite-size medallions. Set aside.
- In a small bowl blend cream cheese, dill, scallion, lemon juice, garlic powder, salt, and pepper together until smooth.
- Transfer to a piping bag or zip-top bag and cut the bottom corner off to create a piping bag. Pipe small dollops of cream cheese onto the sliced cucumber.
- Place a small piece of smoked salmon and a small piece of dill on the top of each bite. Serve arranged on a platter!
