If you’re not from Ohio, you may know these cookies as “chocolate peanut butter balls” but here they’re only known as Buckeyes! They’re a holiday tradition, but this recipe has been altered just slightly to meet the needs of our patients – Give them a try on your holiday cookie plates this year!
Ingredients:
Protein Cookies
- 1 cup peanut butter
- 1 tsp vanilla extract
- ¼ teaspoon cinnamon
- 1/3 cup unsweetened shredded coconut
- ½ cup Peanut Butter Cookie Rebuild Protein
- ¼ cup SF Maple Syrup
Chocolate Coating
- ½ cup Dark chocolate chips
- 2 tbsp coconut oil
Directions
- Pulse coconut in a food processor until it is a fine powder.
- In a large bowl mix together peanut butter, vanilla, cinnamon, coconut powder, protein powder, and maple syrup. Mix until it forms a stiff dough.
- Roll dough into ½ inch balls and transfer to the refrigerator. Chill for at least 30 minutes.
- In the microwave melt chocolate and coconut oil in 30 sec. intervals until melted and completely smooth.
- Using a toothpick or fork dip the chilled peanut butter balls into the chocolate about ¾ of the way so it resembles a buckeye. Place onto a parchment-lined baking sheet.
- Allow to chill in the refrigerator until chocolate is set. Store in an air-tight container for up to 2 weeks.
