If you’re not from Ohio, you may know these cookies as “chocolate peanut butter balls” but here they’re only known as Buckeyes! They’re a holiday tradition, but this recipe has been altered just slightly to meet the needs of our patients – Give them a try on your holiday cookie plates this year!
Ingredients:
Protein Cookies
1 cup peanut butter
1 tsp vanilla extract
¼ teaspoon cinnamon
1/3 cup unsweetened shredded coconut
½ cup Peanut Butter Cookie Rebuild Protein
¼ cup SF Maple Syrup
Chocolate Coating
½ cup Dark chocolate chips
2 tbsp coconut oil
Directions
Pulse coconut in a food processor until it is a fine powder.
In a large bowl mix together peanut butter, vanilla, cinnamon, coconut powder, protein powder, and maple syrup. Mix until it forms a stiff dough.
Roll dough into ½ inch balls and transfer to the refrigerator. Chill for at least 30 minutes.
In the microwave melt chocolate and coconut oil in 30 sec. intervals until melted and completely smooth.
Using a toothpick or fork dip the chilled peanut butter balls into the chocolate about ¾ of the way so it resembles a buckeye. Place onto a parchment-lined baking sheet.
Allow to chill in the refrigerator until chocolate is set. Store in an air-tight container for up to 2 weeks.
