Wild rice stuffing is a high fiber spin on a thanksgiving classic. It’s loaded with fresh veggies and packed with flavor. This recipe is sure to be a hit at your Thanksgiving Dinner!
Prep time: 20 minutes Cook time: 1 hour
Ingredients:
2 tbsp olive oil
2 large onions, diced
8 oz button mushrooms, sliced
8 oz cremini mushrooms sliced
2 stalks celery, diced
2 large carrots, diced
2 cloves garlic, minced
2 tsp dried thyme
5 cups canned low-salt chicken broth
1 tsp salt
½ tsp ground black pepper
1 teaspoons dried sage
1 1/3 cups wild rice
1 1/4 cups long-grain white rice
Directions
In a large pot, sauté onion, carrot, celery and mushrooms over medium high heat until soft, at least 10 minutes. Transfer to separate bowl.
In the same pot, add thyme, sage, chicken broth, salt, and pepper. Bring to a boil, stir in wild rice, Reduce heat to low and cover. Allow to simmer about 30 minutes. Add in white rice and sauteed vegetables, simmer an addition 18 minutes, or until all rice is tender and the liquid is absorbed.
To keep warm: Transfer to a 9x13 in baking dish and cover with foil. Place in a 200-300 degree oven until ready to serve.
