Say hello to our low carb, high protein, Salmon Cucumber Roll! This is the perfect bariatric friendly option for a festive lunch or New Year's Eve appetizer. Resembling sushi, it is a new and improved protein, vegetable, fiber, and healthy fat source! In this month’s Cooking With Celebrate episode, we will walk you through how to (successfully) build, wrap, and serve this delicious dish!
In our Salmon Cucumber Roll, we used canned salmon, which is a rich source of omega-3 fatty acids, protein, and vital vitamins like B12, vitamin D. Avocado is included for an additional layer of healthy fats and fiber. Lastly, we use cucumber and tomato as a low carb option that also helps provide a crunch and texture variety to the roll. With all of these ingredients rolled together, it makes for a nutrient packed recipe that even non-bariatric patients will love!

COOKING WITH CELEBRATE - Salmon Cucumber Roll
| Makes: 2 servings | Prep Time: 15 min |
Ingredients
- 1 cucumber
Canned salmon
1 tbsp light cream cheese
1/4 cup finely chopped red onion
1/2 Tomato
Spoonful of light mayo
1-2 TBSP mustard
1/2 avocado
S&P to taste
Directions
Finely chop your red onion, set aside.
Slice your avocado and tomato, set aside.
Mix together canned salmon, mayo, mustard, red onion, salt, and pepper until a paste is formed.
Thinly slice your cucumber with a potato peeler into long strips. Make about 10-20 of these.
Lay all of your cucumber strips out so they overlap. pat dry.
Spread cream cheese onto cucumber strips.
Layer your salmon mixture, avocado slices, and tomato on top of cucumber strips.
Take layered cucumber strips and roll until all ingredients are tight and secure.
Cut vertical slices into the roll to resemble sushi.
