Ingredients
- 4-5 cups cubed mixed melon (watermelon, cantaloupe, honey dew)
- 2 medium English cucumbers or mini cucumbers, sliced
- 2 medium oranges, segmented
- 1-2 avocados, diced
- 1/4 cup fresh mint, sliced
- 1/4 cup fresh basil, sliced
- 2 cups arugula
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions
- Mix olive oil, lemon juice, salt, pepper, mint, and basil in a bowl.
