Moroccan food is known for being bright and flavorful with different spices, textures, and Mediterranean ingredients. If you’re looking to try a little bit of their culture these meatballs are the perfect start! They’re quick to make for an easy weeknight dinner and the leftovers are even better!
Ingredients:
1 lb ground chicken (or sub ground turkey)
¼ cup bread crumbs
1 large egg, whisked
1 clove garlic minced
¼ cup cilantro, chopped
1 tsp salt
½ tsp ground pepper
½ tsp cumin
½ tsp paprika
½ tsp ground ginger
¼ tsp cinnamon
Lemon Yogurt Sauce:
¼ cup plain non-fat Greek yogurt
1 tbsp lemon juice
½ tsp honey
Directions
Preheat oven to 425 F
Combine all ingredients in a large bowl, mix until just combined.
Form into evenly sized balls and place on a parchment lined baking sheet
Bake in oven for 20 minutes, or until cooked through and browned.
In a small bowl, mix together yogurt sauce ingredients.
Serve meatballs with a whole grain of choice and steamed vegetables on the side. Drizzle yogurt sauce over meatballs before serving.
