Ingredients:
7-8 medium apples – recommend honey crisp
2 tbsp lemon juice
2 tbsp maple syrup
3 tbsp corn starch
3 tbsp apple juice
1 ½ tsp ground cinnamon
1 tsp vanilla
1 pinch nutmeg
Topping:
2 tbsp melted butter
½ cup chopped pecans
1 cup rolled oats
¼ cup raisins (optional)
Directions
Preheat oven to 350 degrees F. Spray a 9x13 in baking dish with non-stick cooking spray.
Peel and core apples, slice thin – make sure they are consistent so they cook evenly. Spread evenly through baking dish.
In a small bowl combine lemon juice, maple syrup, apple juice, cornstarch, cinnamon, vanilla and nutmeg. Whisk to combine and pour liquid mixture over apples.
Mix melted butter, chopped pecans, rolled oats and raisins together. Spread evenly over apples.
Cover with foil and bake for 30 minutes. Remove foil and bake for and additional 10-15 minutes until top is browned and apples are soft.
