Ingredients:
2 tbsp vegetable oil
1 yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 4 oz can diced green chiles (*can sub 1 chopped jalapeno)
1 lb boneless skinless chicken breast
6 cups low-sodium chicken stock
1-14 oz can fire roasted diced tomatoes
1-14 oz can black beans, drained and rinsed
1-4 oz can corn, drained and rinsed
2 tbsp lime juice
1 tsp salt
½ tsp ground black pepper
½ tsp dried oregano
*garnish with chopped cilantro, avocado, and tortilla chips
Directions
In a large stock pot, heat oil over medium heat. Add onions and peppers. Cook until slightly softened. Add garlic and diced green chilies, cook another 1-2 minutes.
Add chicken stock, diced chicken, tomatoes, beans and corn, lime juice, and seasonings. Ring to boil, reduce to simmer. Simmer covered for 30 minutes.
