Ingredients:
- 2 tbsp vegetable oil
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 4 oz can diced green chiles (*can sub 1 chopped jalapeno)
- 1 lb boneless skinless chicken breast
- 6 cups low-sodium chicken stock
- 1-14 oz can fire roasted diced tomatoes
- 1-14 oz can black beans, drained and rinsed
- 1-4 oz can corn, drained and rinsed
- 2 tbsp lime juice
- 1 tsp salt
- ½ tsp ground black pepper
- ½ tsp dried oregano
- *garnish with chopped cilantro, avocado, and tortilla chips
Directions
- In a large stock pot, heat oil over medium heat. Add onions and peppers. Cook until slightly softened. Add garlic and diced green chilies, cook another 1-2 minutes.
- Add chicken stock, diced chicken, tomatoes, beans and corn, lime juice, and seasonings. Ring to boil, reduce to simmer. Simmer covered for 30 minutes.
- Serve with desired garnishes.
