Turkey Burritos

Burritos are a family meal favorite! These smoky burritos lighten the fat and carb loads without sacrificing flavor. Make a tray of these for the next big game and rest assured you're fueling you and your family right!
Serving size = 1 burrito
Number of servings = 8
Prep time = 15 minutes
Cook time = 30 minutes
Ingredients:
- Nonstick cooking spray
- 1 large onion, diced
- 1 large green pepper, diced
- 1 lb. lean ground turkey
- ½ tbsp. cumin
- ½ tbsp. coriander
- 1 tsp. minced garlic
- ½ tbsp. smoked paprika
- 10 oz. can low-sodium petite diced tomatoes, drained
- 10 oz. can black beans, drained and rinsed
- (Optional) 2 oz. green chiles, in whatever heat intensity you like
- 8 taco-sized high-fiber, low-carb tortillas (such as Mission Low-Carb Wheat Tortillas)
- ½ c. 2% shredded cheddar cheese
Topping (all optional):
- Salsa
- Unflavored Greek yogurt, for topping
- Sliced jalapenos
- Diced avocados
Directions:
- Preheat your oven to 350 degrees.
- Set a large skillet over medium flame and allow it to get hot before spraying with non-stick cooking spray.
- Sauté onion, green pepper and garlic 1-2 minutes, until softened. Add ground turkey, breaking up meat and mixing in vegetables, until browned.
- Add spices, tomatoes, black beans, and chiles and drop the heat down to low. Simmer for about 10 minutes.
- Working on a flat surface, lay out tortilla. Place a heaping ½ cup of the meat/veggie mixture in the center of the tortilla. Roll the tortilla by folding the top and bottom over the meat mixture, then rolling into a burrito shape.
- Place each burrito side-by-side in a 13 x 9 inch casserole dish. Spray the top of the burritos with nonstick cooking spray before covering with aluminum foil. Bake 25 minutes.
- Add shredded cheese then bake an additional 5 minutes or until cheese is melted as desired.
- Top with Greek yogurt, salsa, or any other toppings you like!
