Burritos are a family meal favorite! These smoky burritos lighten the fat and carb loads without sacrificing flavor. Make a tray of these for the next big game and rest assured you're fueling you and your family right!
Serving size = 1 burrito Number of servings = 8 Prep time = 15 minutes Cook time = 30 minutes
Ingredients:
Nonstick cooking spray
1 large onion, diced
1 large green pepper, diced
1 lb. lean ground turkey
½ tbsp. cumin
½ tbsp. coriander
1 tsp. minced garlic
½ tbsp. smoked paprika
10 oz. can low-sodium petite diced tomatoes, drained
10 oz. can black beans, drained and rinsed
(Optional) 2 oz. green chiles, in whatever heat intensity you like
Set a large skillet over medium flame and allow it to get hot before spraying with non-stick cooking spray.
Sauté onion, green pepper and garlic 1-2 minutes, until softened. Add ground turkey, breaking up meat and mixing in vegetables, until browned.
Add spices, tomatoes, black beans, and chiles and drop the heat down to low. Simmer for about 10 minutes.
Working on a flat surface, lay out tortilla. Place a heaping ½ cup of the meat/veggie mixture in the center of the tortilla. Roll the tortilla by folding the top and bottom over the meat mixture, then rolling into a burrito shape.
Place each burrito side-by-side in a 13 x 9 inch casserole dish. Spray the top of the burritos with nonstick cooking spray before covering with aluminum foil. Bake 25 minutes.
Add shredded cheese then bake an additional 5 minutes or until cheese is melted as desired.
Top with Greek yogurt, salsa, or any other toppings you like!
