The whole family will love this fun and healthy Halloween recipe! These delicious stuffed peppers are packed with protein, fiber, and veggies. Best of all, they don’t take long to prepare, so they’re perfect for before or after trick-or-treating!
Ingredients:
4-6 orange bell peppers
1 lb 99% lean ground turkey
1 small onion, diced
2 cloves garlic, minced
2 cups cooked brown rice
1 cup black beans, drained and rinsed
1 15 oz can diced fire roasted tomatoes
1 packet reduced-sodium taco seasoning
Optional: chopped cilantro
Directions
Preheat oven to 350 degrees F
Prepare the peppers. Slice the top and stem off. Remove seeds and membranes. Cut fun jack-o’-lantern faces into one side of each pepper. Place in a foil-lined baking dish and set aside.
Prepare the filling. Brown the turkey in a frying pan. Add onion and garlic and cook until soft. Add rice, beans, tomatoes, and taco seasoning. Stir to combine. Add cilantro if desired.
Scoop filling into each pepper and place the top back on. Bake for 25-30 minutes or until the pepper is slightly softened and the filling is heated through.
