Ingredients:
- 1 lbs chicken breast, cut into 1in cubes
- 1 pint cherry tomatoes, halved
- 1 medium onion, diced
- ½ Red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded mozzarella cheese
- ½ cup chopped fresh basil
- *Optional, ¼ tsp red pepper flakes
Directions:
- Pre-heat oven to 400 degrees F
- Spray a 9x13 glass/ceramic baking dish with non-stick cooking spray.
- Season chicken cubes with salt and pepper, place in baking dish. Set aside.
- In a medium sized bowl, combine tomatoes, onion, bell pepper, garlic, balsamic vinegar, olive oil, salt, pepper, and optional red pepper flakes. Stir to combine.
- Spoon all of the tomato mixture onto chicken to evenly cover.
- Place in oven and bake for 15 minutes. Remove and top with mozzarella cheese. Return to oven and bake for another 5-10 minutes, or until chicken is cooked through and cheese is melted and bubbling.
- Remove from oven and top with chopped fresh basil.
